Zucchini Noodle Bowl with Grilled Salmon



Ingredients:

  • 2 salmon fillets (about 6 ounces each)

  • 4 medium zucchinis, turned into noodles with a spiralizer, or peeled into ribbons using a vegetable peeler

  • 2 tablespoons olive oil

  • 1 tablespoon soy sauce

  • 1 clove garlic, minced

  • Salt and pepper, to taste

Optional toppings: sliced avocado, sesame seeds, chopped green onions, cilantro

Instructions:

  1. Grill Salmon:

    • Preheat your grill or grill pan to medium heat. 

    • Season the salmon fillets with salt and pepper, and brush with some olive oil. 

    • Grill until the salmon is cooked through and flakes easily, about 3-4 minutes per side.

  2. Prepare Zucchini Noodles:

    • While the salmon is cooking, heat the remaining olive oil in a large pan over medium heat. 

    • Add the garlic and sauté for about 30 seconds. 

    • Add the zucchini noodles and soy sauce, and toss for 2-3 minutes until just softened.

  3. Assemble and Serve:

    • Divide the zucchini noodles between bowls. Place a grilled salmon fillet on top of each. 

    • Add optional toppings like sliced avocado, sesame seeds, and green onions if desired.
