Zucchini and Shrimp Skewers



Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 2 medium zucchinis, cut into rounds

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • Lemon wedges, for serving

  • Optional: Serve over brown rice.

Instructions:

  1. Preheat Grill:

    • Preheat your grill to medium-high heat.

  2. Prepare Skewers:

    • Thread the shrimp and zucchini rounds alternately onto skewers.

  3. Season:

    • In a small bowl, mix together olive oil, lemon juice, oregano, salt, and pepper. Brush this mixture over the skewers.

  4. Grill:

    • Grill the skewers, turning occasionally, until the shrimp are pink and opaque and the zucchini is tender, about 5-7 minutes total.

  5. Serve:

    • Serve hot with additional lemon wedges on the side.
