Ingredients
- 1 bunch Swiss Chard, any color
- 2-3 tbsp (30-45 mL) extra virgin olive oil
- 1 medium cooking onion, sliced
- 2-10 cloves garlic, chopped
- 1-2 sprigs fresh rosemary, chopped
- 1-398 mL (14 oz) can white beans, drained & rinsed
- 1/2 cup (120 mL) vegetable broth or water
- chili flakes, sea salt & black pepper, to taste What to do
- Separate the Swiss chard stems from the leaves. Slice the stems and roughly shop the leaves.
- In a large skillet, heat olive oil over medium-high. Add onion and sliced chard stems; sauté until starting to soften.
- Stir through garlic and rosemary; cook 1 minute longer, stirring frequently.
- Add the chard leaves and all remaining ingredients. Cook, stirring often, until the leaves are wilted and the onions are tender; about 4-6 minutes.
- This can be made with any leafy green vegetable in place of the Swiss chard.
- Use any kind of white beans.
