Swiss Chard with White Beans, Garlic & Rosemary

Ingredients

    • 1 bunch Swiss Chard, any color
    • 2-3 tbsp (30-45 mL) extra virgin olive oil
    • 1 medium cooking onion, sliced
    • 2-10 cloves garlic, chopped
    • 1-2 sprigs fresh rosemary, chopped 
    • 1-398 mL (14 oz) can white beans, drained & rinsed 
    • 1/2 cup (120 mL) vegetable broth or water 
    • chili flakes, sea salt & black pepper, to taste What to do
Instructions
    • Separate the Swiss chard stems from the leaves. Slice the stems and roughly shop the leaves. 
    • In a large skillet, heat olive oil over medium-high. Add onion and sliced chard stems; sauté until starting to soften. 
    • Stir through garlic and rosemary; cook 1 minute longer, stirring frequently.
    • Add the chard leaves and all remaining ingredients. Cook, stirring often, until the leaves are wilted and the onions are tender; about 4-6 minutes. 
Notes
    • This can be made with any leafy green vegetable in place of the Swiss chard. 
    • Use any kind of white beans.
