Grilled Chicken Nova Lettuce Salad

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 head Nova lettuce, leaves washed and dried

  • 1 cucumber, sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon honey

  • Salt and pepper, to taste

Instructions:

  1. Grill the Chicken:

    • Preheat your grill or grill pan. 

    • Season the chicken breasts with salt and pepper. 

    • Grill over medium heat until cooked through, about 6-7 minutes per side. 

    • Let rest for a few minutes, then slice thinly.

  2. Prepare the Salad:

    • In a large salad bowl, layer Nova lettuce leaves, sliced cucumber, cherry tomatoes, and red onion.

  3. Make the Dressing:

    • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.

  4. Assemble and Serve:

    • Add the grilled chicken slices to the salad. 

    • Drizzle the dressing over the top and toss gently to combine. 

    • Serve immediately.
