Ingredients:


- 8 large leaves Green Butter Pelled Lettuce, leaves separated

- 1 cup Collard Greens, thinly sliced

- 1 Red Bell Pepper, julienned

- 1 Cucumber, julienned

- 2 tablespoons Fresh Mint, chopped

- 1 teaspoon Fresh Thyme, chopped

- 2 tablespoons Soy sauce, hoisin sauce, chilli crunch (optional)

- Lime wedges for serving


What you’ll need:


- cutting board

- Chef’s knife

- grill or grill pan

- heat-safe tongs

- small bowl

- whisk 


Method:

 

  1. Prepare the vegetables by slicing collard greens, bell peppers, and cucumbers into thin strips.
  2. Lay out the lettuce leaves and place a mixture of collard greens, bell peppers, cucumbers, and fresh herbs in each leaf.
  3. Drizzle with a little soy, hoisin sauce, or chilli crunch if desired.
  4. Roll up the lettuce leaves and secure them with a toothpick if needed.
  5. Serve with lime wedges for a fresh, crunchy, and herbaceous appetizer or light meal.
