Butter Lettuce Wraps with Chicken

 

Ingredients:

  • 1 head butter lettuce, leaves separated and washed

  • 2 cups cooked and shredded chicken (rotisserie works perfectly if you’re short on time)

  • 1 carrot, julienned

  • 1 bell pepper, thinly sliced

  • 1/2 cup thinly sliced red onion

  • 1/4 cup fresh cilantro leaves

Sauce:

  • 1/4 cup hoisin sauce

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 clove garlic, minced

  • 1 teaspoon grated ginger

Instructions:

  1. Mix all sauce ingredients in a bowl.

  2. In another bowl, combine the chicken, carrot, bell pepper, red onion, and cilantro. Pour the sauce over the chicken mixture and mix well.

  3. Place a spoonful of the chicken mixture into the center of each butter lettuce leaf. Fold the leaves over the filling and serve as wraps.
