Ingredients:

1 head butter lettuce, leaves separated and washed
 - 
2 cups cooked and shredded chicken (rotisserie works perfectly if you’re short on time)
 - 
1 carrot, julienned
 - 
1 bell pepper, thinly sliced
 - 
1/2 cup thinly sliced red onion
 - 
1/4 cup fresh cilantro leaves
 
Sauce:
- 
1/4 cup hoisin sauce
 - 
2 tablespoons soy sauce
 - 
1 tablespoon rice vinegar
 - 
1 teaspoon sesame oil
 - 
1 clove garlic, minced
 - 
1 teaspoon grated ginger
 
Instructions:
- 
Mix all sauce ingredients in a bowl.
 - 
In another bowl, combine the chicken, carrot, bell pepper, red onion, and cilantro. Pour the sauce over the chicken mixture and mix well.
 - 
Place a spoonful of the chicken mixture into the center of each butter lettuce leaf. Fold the leaves over the filling and serve as wraps.
