Warm Kale & Sweet Potato Salad with Maple Dijon Vinaigrette

Hearty enough for lunch and elegant enough for a holiday side, our Blue Curled Vates Kale, sweetened by winter frost, pairs beautifully with caramelized sweet potatoes and a tangy maple dressing. It’s the perfect choice when you’re craving a cozy bowl of color and comfort.

Serves: 4

Preparation time: 30 minutes

Occasion: Perfect for a cozy lunch or a light but nourishing weeknight meal.

Ingredients:

  • 4 cups Bloom Ranch Blue Curled Vates Kale (stems removed and chopped)

  • 2 medium sweet potatoes (peeled and diced)

  • 1/4 cup red onion (thinly sliced)

  • 2 tablespoons olive oil

  • Salt and pepper (to taste)

  • 2 tablespoons chopped pecans

  • 1 tablespoon dried cranberries

  • 2 tablespoons maple syrup

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apple cider vinegar

How to prepare:

  1. Preheat oven to 400°F. 

  2. Toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 25 minutes, or until tender.
