Spicy Mizuna and Jalapeño Chicken Wraps



Ingredients:
  • 2 cups Asian mizuna greens, washed and chopped
  • 1 jalapeño, seeded and thinly sliced 
  • 1 lb chicken breast, sliced into strips
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 4 whole-grain tortillas or wraps
  • 1/4 cup plain Greek yogurt
  • 1/2 lime, juiced

Instructions:
  1. Prepare the chicken: 
    • Slice chicken breast into strips and season with chili powder, garlic powder, and soy sauce.
  2. Cook the chicken: 
    • Heat olive oil in a skillet over medium heat. Add chicken strips and cook for 6-8 minutes, flipping occasionally, until cooked through and golden brown. 
    • Remove from heat and set the chicken on a plate aside
  3. Sauté jalapeños: 
    • In the same skillet, lightly sauté the sliced jalapeños for 1-2 minutes until softened but still vibrant.
  4. Assemble the wraps: 
    • Warm the tortillas in a dry skillet or microwave. 
    • Spread a spoonful of Greek yogurt onto each tortilla. 
    • Layer with mizuna greens, cooked chicken strips, and sautéed jalapeños.
    • Drizzle with a squeeze of lime juice for extra flavor.
  5. Wrap and serve.
