Turnip and Cabbage Slaw with Grilled Chicken
Ingredients:
- 1 cup turnips, shredded (box grater)
- 2 cups cabbage, shredded (box grater)
- 2 tbsp Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1 lb chicken breast
- Salt and pepper to taste
Instructions:
- Prepare slaw:
- In a large bowl, mix shredded turnips, cabbage, Greek yogurt, apple cider vinegar, honey, salt, and pepper.
- Toss to combine.
- Grill chicken:
- Season chicken breasts with salt and pepper.
- Grill over medium heat for 5-6 minutes per side until cooked through.
- Slice thinly.
- Assemble dish:
- Plate the slaw and top with grilled chicken slices.
