Turnip and Cabbage Slaw with Grilled Chicken



Ingredients:
  • 1 cup turnips, shredded (box grater)
  • 2 cups cabbage, shredded (box grater)
  • 2 tbsp Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 lb chicken breast
  • Salt and pepper to taste
Instructions:
  1. Prepare slaw: 
    • In a large bowl, mix shredded turnips, cabbage, Greek yogurt, apple cider vinegar, honey, salt, and pepper. 
    • Toss to combine.
  2. Grill chicken: 
    • Season chicken breasts with salt and pepper. 
    • Grill over medium heat for 5-6 minutes per side until cooked through. 
    • Slice thinly.
  3. Assemble dish: 
    • Plate the slaw and top with grilled chicken slices.
