Bok Choy and Turnip Miso Soup with Tofu

Bok Choy and Turnip Miso Soup with Tofu



Ingredients:

  • 2 cups bok choy, chopped

  • 1 cup turnips, peeled and diced

  • 4 cups vegetable broth

  • 2 tbsp miso paste

  • 1 cup firm tofu, cubed

  • 1 clove garlic, minced

  • 1 tsp ginger, grated

  • 1 tsp sesame oil

Instructions:

  1. Prepare broth: 

    • In a large pot, heat sesame oil over medium heat. 

    • Sauté garlic and ginger for 1-2 minutes.

  2. Cook turnips: 

    • Add diced turnips and cook for 5 minutes. 

    • Pour in vegetable broth and simmer for 10 minutes until the turnips are fork-tender.

  3. Add bok choy and tofu: 

    • Stir in the bok choy and tofu cubes, cooking for another 5 minutes.

  4. Finish with miso: 

    • Remove a ladle of broth, dissolve the miso paste in it, and return to the pot. 

  5. Stir well and serve hot.
