Ingredients:

- 2 cups Collard Greens, chopped

- 1 cup Pak Choi, sliced

- 1 Red Bell Pepper, thinly sliced

- 1 Green Bell Pepper, thinly sliced

- 1 tablespoon Fresh Thyme, finely chopped

- 2 tablespoons Olive oil

- 3 cloves Garlic, minced

- 2 tablespoons Soy sauce

- Salt and pepper to taste

- 1 cup Cooked brown or white rice *optional* 


What you’ll need:

- cutting board

- Chef’s knife

- large, non-stick skillet

- spatula



Method:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and fresh thyme, sautéing until fragrant.
  3. Toss in the sliced bell peppers and cook until they start to soften.
  4. Add chopped collard greens and Pak Choi, stirring frequently until wilted but still vibrant.
  5. Season with soy sauce, salt, and pepper to taste.
